Experience from other games shows that even in "tried and tested" situations, the limited ability of an A.I. to cooperate with a player and let itself be escorted, leads to endless frustration. If the npc escort missions arrive we'll quickly see "No don't go that way stupid robot!" on chat channel on a regular basis.

The answer to that first part is to allow for a "Trader" profession to exist. If you don't have the skills and attributes that reduce tax and fees then placing sell orders can cost more than insta selling. This discourages pure fighters for example and leaves room for the "Trader" career.

The answer to that second part is that sometimes nobody makes the item in question. In all cases the cost at which npcs sell items are so ridiculously high that it's possible to make a very comfortable margin on a segment which npcs populate.
